Infermentum’s interpretation of the Torta di Rose, a typical desert from Mantua, sees mothers yeast mingle with the softness of butter and the coarseness of sugar to bring lightness to a dough scented with orange and vanilla. At its best when served warm, a quick spell in the oven will create a crunchy topping to complement the delicate centre.
Cake: ‘00’ soft wheat flour, butter, sugar, category A pasteurised egg yolk, natural mother yeast (‘00’ soft wheat flour, water), cane sugar, category A pasteurised egg white, acacia honey, candied orange paste (orange peel, glucose-fructose syrup, sugar), salt, rice starch, Madagascan bourbon vanilla beans.
Topping: cane sugar, category A pasteurised egg white.
