notes

The Cardoon, also known as the artichoke thistle, is a tall, sun loving perennial that produces handsome foliage and statuesque stems bearing large, purple, thistle-like flowers in high summer. These decorative flowers also work well in flower arrangements.

Insights

Harvest the buds before they come into flower, and they can be eaten in the same manner as artichokes. The stems, however, are also a delicacy (appreciated especially in the Victorian era) and can be steamed or fried.
