Despite their name, surprisingly Jerusalem Artichoke are neither from Jerusalem, nor are they true artichokes. However, their tubers are still delicious and rewarding when grown from home. A perennial plant, any tubers left unharvested at the end of the season will grow again next year.

- Two tubers
- Plant from February to April
- Plant 15cm deep, 60cm apart
- Full sun position. Fertile, well drained soil.
- Water well after planting
- Will produce large plants above the soil that will need staking.
- Make sure the tubers do not become exposed to light - mound up the soil over them if any begin to appear
- Cut down flowering stalks to concentrate energy on the tubers, which will be ready for harvesting 4-6 weeks after flowering.
