Black Bean Rayu
This umami-rich sauce of fermented black beans is, in his own words, the only thing Michel Roux Jr. always has in his store cupboard, aside from an emergency bottle of champagne. With a slight fruitiness, layers of miso flavours, and a generous kick of gochutgaru and chilli, it is ideal for cold or grilled meats, adding richness to a salad dressing, or marinating fish.
Add additional options
Sunflower oil, Fermented black bean (soya) 13%, Black sesame seeds, Gochutgaru, Chilli flakes, Tamari (soya), Crispy garlic, Raw cane sugar, Sichuan pepper, Sea salt, Spices
